In addition to juice, numerous other products are obtained from fruits. We have already mentioned purée, and peeled fruit pieces or fruit cocktails are also commercially available. The waste products which occur during production of such products are the peel and cores. These fruit parts contain considerable quantities of sugar which can be recovered. We can use the example of the pear to see how decanter technology can be used to further extract parts which used to be rejected.
